Ellen Campbell, Burbank, CA**********************************As a mega-lover of cheese, growing up in Chicago gave me access to a myriad of cheeses, many coming from the dairy-land of Wisconsin. As a kid, I remember driving with my sister and Dad when I was about 8, to visit the “cheese man” in Oshkosh, WI. Built like a barrel, the cheese man wore a white apron and paper white hat and he let us sample as many cheeses as we liked. I LOVED them all.My grilled cheese sandwiches have evolved from the “top brown” only Valveeta slices of my youth, where the cheese swelled to make a pocket for my ketchup, to brick cheese with homegrown beefsteak tomatoes, to my present day “any cheese or combo cheeses grilled on a panini using La Brea sourdough,” almost always eaten with Pica Peppa Jamaican sauce.
